Papadopoulos Kyriakos “PASSAS” Winery is a family-run business that began operations in Stavrochori, Xanthi, near the border with Drama, in 2016. The vineyards of PASSAS Winery stretch across the northern slopes of the Nestos Valley, at the foothills of the Rhodope Mountains, at an altitude of 110–130 meters, nourished by the waters of the “Mavra Nera” spring.
The first vineyards were planted in 2007, arranged in linear rows, covering 50 acres. Initially, the cosmopolitan varieties Syrah and Sauvignon Blanc were cultivated alongside the Greek varieties Assyrtiko and Mavroudi. In 2017, the Vidiano variety was added. Experimentation with Greek varieties continues to this day, aiming to evaluate their performance in the local soil and microclimate. Our goal is to highlight the potential of our region through proper management of the terroir.
The vineyard soil is sandy to a depth of 30 cm, then clay with scattered schist rocks extending beyond 110 cm, aiding both proper drainage and root system expansion. The climate is continental, with significant temperature differences between summer and winter, as well as between day and night.
